Potato-Stuffed Roast Goose Recipe

An old Kuyavian custom of eating goose on St. Martin's Day disappeared some years ago but now it enjoys its revival. Below, you can see one of the most popular recipes for goose.

INGREDIENTS

  • 1 goose (about 4kg)
  • potatoes (about 1kg)
  • marjoram, salt

PREPARATION

1. Wash the goose and sprinkle it (outside and inside) with some salt. Rub it also with some marjoram.

2. Peel the potatoes and add some salt and marjoram.

3. Insert the potatoes into the goose and tie it up.

4. Roast at 180o for about 3 hours.

5. Pour some water over the goose every hour.

6. The goose is ready when its skin is browned and the potatoes are tender.
